Fancy Salmon
Again, this was made in a toaster oven.
* = optional
1 lb fresh salmon fillet
1 large yellow tomato
organic cocoa powder
brown sugar
*cooking spray
Dressing:
2/3 cup water
1/3 cup olive oil
3 large criminy mushrooms
2 handfuls roasted cashews (not salted)
1 tbsp ground cayenne pepper
1 tsp ground paprika
1/2 tsp salt
Dressing
1) Grind up cashews w/ a mortar and pestle.
2) Chop up mushrooms as fine as you can.
2) Put mushrooms and cashews in a saucepan w/ water, olive oil, cayenne pepper, paprika and salt.
3) Stir together and cook on low heat till dressing starts to simmer.
Main Dish
1) Preheat toaster oven for 10 min @ 375 degrees fahrenheit.
2) Spray an oven tray w/ cooking spray (or grease tray however you like).
3) Place salmon fillet onto it.
4) Pour 1/3 to 1/2 of the dressing over salmon, until the fish is covered.
5) Chop up tomato into eights and place on and around the fillet.
6) Bake for 20 minutes, then remove from toaster oven.
7) Cut open thickest part of fillet and drizzle some of the dressing already on the tray down into the cut.
8) Bake for an additional 10 to 15 min or until fish is cooked through.
9) Sprinkle cocoa powder and brown sugar over entire dish.
Use remainder of dressing as sauce for a side dish of your choosing, or just save for later.
Should take about 50 min altogether.
Makes 3 servings.
