Tried thing I did the other day with salmon again last night, with some variation. This time on catfish. Worked much better on the catfish.
Easy Fatty Delicious Catfish
Note: This was made in a toaster oven. Some time/heat adjustments may be necessary if making in an actual oven. Though if you're using an actual oven you probably know more about cooking than I do.
* = optional
3 small fillet of fresh catfish (1/3 lb each)
glass of water
honey mustard (like, for sandwiches)
olive oil
*butter
*cooking spray
handful of pecans
salt
black pepper
tarragon (dry)
rosemary (dry)
4 cloves garlic
2 small/medium sized heads of broccoli
6 pieces of asparagus
Main Dish
1) Mix 2 tbsp of honey mustard w/ 1 tbsp olive oil and 1 tbsp water. Sprinkle in rosemary, tarragon and salt. Mix. I'm going to call this the marinade.
2) Line oven/toaster oven tray w/ foil. Grease foil w/ olive oil or cooking spray.
3) Preheat toaster oven for 10 min at 375 degrees fahrenheit.
3) Massage marinade into fish fillets and place in tray, then wash your hands.
5) *Put little slivers of butter over fillets. As much as you think isn't gratuitous. Mmmmmmm, butter.
6) Slice up three cloves of garlic. Spread over fillets.
7) Crumble up pecans into small pieces. Sprinkle over fillets.
8) *Drizzle on a little more olive oil/spray a little cooking spray over the fish.
9) Stick in toaster oven and cook for 15 min.
Side Dish
1) Chop up broccoli and asparagus.
2) Throw dash of water and dash of olive oil into a pan. Chop up last clove of garlic and throw that in too.
3) Turn stove to low heat.
4) Throw in vegetables.
5) Mix tbsp of honey mustard with 1/3 cup water and a dash of olive oil (you can just beat it with a fork). Toss into pan.
6) Sprinkle in salt, black pepper, rosemary and tarragon.
7) Stir around till vegetables steam through.
Should take about half an hour altogether.
Makes 3 servings.
Now must think of something else to do with salmon. The texture of the salmon was perfect, so it's just the seasonings I need to mess with. I'm thinking something involving lemon and cayenne pepper and cashews. Oh! And tomatoes and mushrooms. Should probably use the rest of the green onions. Hmmmmmm. I'll try something Saturday night. If it works, I'll make some more Sunday morning to bring to
morgandawn's SPN gathering. Otherwise I'll make the catfish dish to bring.

It's too hot in the summer to use the real oven. The toaster oven is perfect!
Anyone know how long fresh fish lasts in the fridge?
I've always been told 48 hrs.
